Carter's Maple Syrup "1 Litre in a Really Ugly Bottle" "Buy all you want - no limits!" -Eric
A little History... Our family has been making syrup at our farm since 1905, when my great-grandfather purchased the farm and luckily it had a maple bush preserved from logging because it was close to the farm buildings. All of our current bush lots were purchased between 1905 and 1933 from logging companies after they had been harvested. As a point of interest all of our syrup production occurs on the Ardtrea Island ANSI (Area of Natural and Special Interest) as identified by the Provincial Government. We also own land in the North River Swamp, recently named a provincially significant Wetland, as one of the largest ANSI's in Simcoe County, we are the largest single land owner of the ANSI. In 2017 we replaced the old wood fired evaporator with a wood pellet fired evaporator, our first boil was in the Spring of 2018 after the sap house addition was finished. Its efficiency to provide a consistent heat and with less man power required than before with stoking the wood fire stove has been greatly welcomed during our busy boiling season. We always look forward to this time of year, as many of our relatives and friends come out to lend a hand and partake in our traditions, even if its just for the samples! -Eric & Family
